Nutty Brown Rice Salad for “Nutty People” (L0L)
1 cup brown uncooked rice Rinse until water runs
clear-13/4 cups water (no salt)-Cook 45 min or until water is absorbed (I use a
rice cooker)
¼ less salt soy sauce (or gluten free if you have
allergies)
½ medium onion finely chopped-add to cooked rice while it
is still hot-leave for two hrs. or overnight.
Dressing: Mix all this stuff
¼ cup evoo(or canola or grape seed)
1 TBSP lemon juice
1 tsp. grated lemon rind
1 clove garlic minced
1 tsp. grated lemon rind
1 tsp. grated ginger
1 tsp. honey or sugar or agave nectar
Just before serving add:
1 red pepper finely chopped
½ cup sultana raisins
3 green onions chopped (optional)
½ cup of each of the following-Bo’s Buds(hemp)//pumpkin
seeds/sunflower seeds/crushed peanuts (optional)
· I have added all the nut stuff ahead and
it still tastes great-super the second and third day!
